Wynn Las Vegas is set to welcome the very first Four Sixes Ranch Steakhouse pop-up this September, a treat sure to delight fans of the popular TV show “Yellowstone.” The new restaurant comes from Taylor Sheridan, creator of the series, and will be located inside Tableau at Wynn Tower Suites. Sheridan also owns Four Sixes Ranch, a working cattle farm in King County, Texas, which already supplies the Wynn with some of its premium beef.
“This distinctive, limited-time pop-up puts an emphasis on Western authenticity paired with an unforgettable dinner and cocktail menu,” said Brian Gullbrants, COO of Wynn Resorts North America, in an official statement.
The menu will feature an array of standout dishes, including a caviar tower accompanied by potato tots, kettle chips, brioche toast, country-fried chicken tenders, chive crema, deviled quail eggs, lemon zest, parsley, and bacon bits, as well as a tableside prime beef tartare.
Sheridan’s relationship with Wynn Las Vegas began in 2022, following his purchase of Four Sixes Ranch in 2021. December of that year saw him host the star-studded premiere of his “Yellowstone” spinoff, “1923,” at the Wynn’s Strip casino resort.
Reservations for this exclusive dining experience will be available to the public starting August 26, with the first service scheduled for Monday, September 16 at 5:30 p.m. No closing date for the pop-up has been announced yet.
Meanwhile, in other dining news along the Strip, Eater Vegas editor Janna Karel spent nine consecutive days sampling food at the nine remaining buffets on or near the Las Vegas Strip, including those at Caesars Palace, Wynn, Bellagio, Luxor, Cosmo, MGM Grand, Palms, Excalibur, and Circus Circus. The number of buffets on the Strip has drastically decreased from an estimated high of 25 in the ’90s, largely because buffets traditionally operated at a loss. However, they were popular as they encouraged guests to spend more time and money gambling. As gambling revenue now only accounts for approximately 25% of casino income, compared to a peak of 75%, many corporations deem it no longer justifiable to operate loss-leading buffets. As a result, most of the remaining buffets have moved away from being a budget-friendly option.
In new restaurant openings, the Cosmopolitan’s Holsteins will be replaced by Mariposa Rosa Mexican Restaurant. While an opening date has not been disclosed, a taqueria with the same name operates in Manhattan. The new restaurant comes from Holsteins operator Gen3 Hospitality, and the transformation is projected to cost $2.9 million, according to a building permit application.
Celebrity chef José Andrés is also expanding his presence in Las Vegas, with the announcement of a new Bazaar Mar opening at The Shops at Crystals on Wednesday, August 7. This will be the fifth Las Vegas location for Andrés, with Manuel Echeverri leading the culinary team. The menu will feature dishes rooted in Spanish flavors with playful elements. Additionally, Andrés will introduce Zaytinya at Caesars Palace, a development first reported in June 2021.
Lastly, a service bar at the Palazzo was recently closed by the Southern Nevada Health District on August 2 due to health violations, scoring 23 demerits according to the district’s report.
