What’s the big deal about Gluten????

The new fad in diets seems to be going “gluten free”. Why are people doing this? Is it the new diet toreplace Atkins, Weight Watchers or South Beach??? Does this mean that I can’t eat carbs anymore? Whatis left to eat?

Well, hold on, don’t panic….let’s examine this situation.

First of all, what exactly is Gluten? Gluten is actually an amino acid that for simplicity, gives bread, pizza
and other great “carbs” their elastic and chewy properties. Many people have exaggerated immune
responses to gluten, meaning that their immune systems are overly sensitive and can sometime build up a

But sometimes it can do the same to surrounding tissues such as the nervous system or in the digestive system. This all out assault on the body’s own tissue is what we call and auto-immune response. Auto-immune diseases such as MS, Raynaud’s, Hashimoto’s Thyroiditis, Type 2 Diabetes, Rheumatoid Arthritis and Celiac Disease can all trace their symptomatology back to one major problem: Inflammation.
Inflammation is the major culprit in many of the diseases from heart to brain disease.
What does Gluten have to do with this? Three of the most inflammatory foods are Gluten, Dairy and Soy.
So, if you are suffering from and Auto-Immune condition, have had a concussion or have a child with
learning challenges such as ADD/ADHD or Autism, it behooves you to eliminate Gluten from your diet.
When I say eliminate, it means 100%….you cannot be 90% Gluten Free and expect to have good results
from going Gluten –Free. Gluten is not the magic word of the month for losing weight, but what a gluten-
free diet will do is help you to decrease inflammation when you really do have issue and that can be life
changing.
