Zilver, one of Sydney’s most beloved Asian culinary destinations, has been issued fines totaling over $5000 for engaging in unsafe food practices. The Bondi Junction establishment underwent a thorough inspection on August 18 by Waverley council officers, leading to the imposition of five unique penalties.
The heftiest penalty, which came in at $1540, was delivered for the mishandling of food in a manner that could probably render it risky for consumption. An emblematic locale for Cantonese gastronomy, Zilver was also fined for other apparent violations including insufficient premises cleanliness, inadequate maintenance of operational conditions, the lack of proper food safety and hygiene knowledge amongst staff, and failure to implement vital measures for preventing food contamination.
Inspectors from NSW’s Food Authority made the information regarding these penalties public this week, after the fines were fully settled.
For more than three decades, Zilver has been serving up authentic Cantonese cuisine to Sydney food enthusiasts. The current proprietors, Henry and Chillie Tang, assumed control of the business from Mr. Tang’s father in the early 2000s. However, Zilver’s original Haymarket venue had to shut its doors earlier this year due to a building redevelopment project.
Known for its exceptional yum cha offerings, the Zilver Group also operates another restaurant in Haymarket, affectionately named “The Eight”. Interestingly, Zilver’s Bondi outpost had earlier made news in 2016 when an unexpected altercation erupted during a baby shower celebration.
Efforts to reach out to Zilver for an official statement on the matter have been initiated.
