Fluffy Buttermilk Pancakes

Fluffly Buttermilk Pancakes, weekend brunch, breakfast, West Island Blog, Rhonda Massad, summertime,

Topped with fresh berries and pure maple syrup these pancakes are heavenly!

2 cups buttermilk

2 eggs, separated

3Tbsp butter, melted

2 cups flour

2tsp granulated sugar

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

Using an electric mixer beat egg whites until stiff peaks form. Put aside.

In a bowl stir together buttermilk, egg yolks, and butter until smooth and well combined

In another bowl stir together flour, sugar, baking powder, baking soda, and salt.

Slowly pour buttermilk mixture to flour mixture until combined, there will be some lumps but this is ok.

Gently fold egg whites into this batter until combined.

Grease skillet, pour 1/4 of batter on very hot skillet spreading batter with the back of a spoon. Cook until bubbles appear on

surface. Flip pancake and cook till lightly browned. Repeat until all the batter is finished.
