Summer is finally here. Nothing like a cold drink to sip under the umbrella. This is a quick and easy one that is a crowd pleaser.
INGREDIENTS:
2 cups fresh raspberries
1 ¼ cups fresh lemon juice (about 6 lemons)
1/2 cup cold water
1/2 cup granulated sugar
1/2 cup honey or agave nectar (to taste)
1 liter (33.8 oz) sparkling water or club soda
Place the raspberries in a food processor and process until smooth. Pour pureed raspberries in the sugar water and stir well. Add the lemon juice.
Combine the raspberry mixture and the cold water in a large pitcher. Stir well and add lots of ice. Serve raspberry lemonade with thin slices of lemons and raspberries and garnish with mint.
