As I look forward to the sweet days of summer I cannot help but think of the Italian saying “il dolce far niente,” the sweetness of doing nothing.
Summer is for long and lazy days and in this city we pay special attention to our short yet sweet season.
Keeping in theme with doing as little as possible while enjoying the days ahead here is a salad that is simple and easy to prepare. Great to take on a picnic or keep in the fridge to just enjoy when the mood strikes.
Yields: 6 side-dish servings
1 (15oz) can Cannellini Beans, drained and rinsed
1 pint grape tomatoes, halved
1/3c flat-leaf parsley, chopped
For the Dressing:
1/4c extra virgin olive oil
2 cloves garlic, chopped
1/2t rosemary
1/4c grated Parmesan cheese
1/2t salt
1/4t pepper
1t lemon zest
1/4c lemon juice
In a bowl, combine beans, tomatoes, and parsley. Fold together. In a smaller bowl, whisk together dressing ingredients until fully combined. Pour over salad and stir to coat. Refrigerate at least an hour before serving for flavors to mingle
